Founded and conceptualised by internationally acclaimed chef Edgard Sanuy Barahona, Lola Maria introduces a fresh perspective on Spanish cuisine, one that seamlessly blends timeless tradition with contemporary flair. Lola Maria is poised to become a new gathering place for both neighbourhood regulars and international food lovers alike.
A concept rooted in duality
Inspired by two contrasting personalities, Lola Maria’s concept embodies a distinctive culinary philosophy at its heart. Lola represents bold creativity and modern flair, while Maria reflects the heartfelt warmth and deep-rooted traditions of classic Spanish cooking. Together, they form the restaurant’s guiding philosophy, honouring authentic flavours while embracing innovation.

This vision is brought to life by Chef Edgard Sanuy Barahona, who brings to this project over two decades of international culinary experience from across Europe and Asia. Known for his refined, yet approachable style, and deep respect for Spanish culinary heritage, Barahona has built a reputation for creating food that tells a story. Lola Maria is a reflection of his roots, passion, and desire to present elevated Spanish dining in a way that feels accessible, social, and full of heart.
“Lola Maria is my most personal project to date,” says Founder and Chef Edgard Sanuy Barahona. “After many years in kitchens, I wanted to create a space that reflects my own journey – a balance between the authentic flavours I grew up with and the modern techniques I have developed throughout my career. It is about warmth, generosity, and sharing food in the way it is meant to be enjoyed.”
A social Spanish dining experience
At Lola Maria, the culinary experience is designed around sharing, discovery and connection. The menu will showcase a curated selection of Spanish dishes, centred on platillos – small and big plates made for the table. Guests can look forward to familiar Spanish comforts such as traditional ajilo garlic shrimps, slightly seasoned padrón peppers, Spanish open omelette with chistorra and charred leeks, alongside thoughtfully reimagined creations including foie “collverd” & negroni lollipop and Madrid “Sando” with fried baby squid. The beverage programme is equally considered, featuring a dedicated Spanish wine selection, house-made sangria, and classic cocktails prepared with creative flare. To complete the experience, indulgent desserts round out the menu, ensuring each meal ends on a memorable note.
